Creamy Chicken with Mashed Potatoes Recipe

Cooking takes effort, but when you love delicious food, it stops being a chore and becomes a fun activity. One of my all time favorite meals involves two of the most versatile ingredients; chicken and potatoes. Today, I’ll be showing you how to whip up creamy chicken with mashed potatoes.
The best part about this meal is that it’s packed with protein, vitamins, and healthy fats. Plus, it’s super easy to make and the ingredients are not only cheap but easily accessible no matter where you are. The Cooking Process
Cooking creamy chicken with mashed potatoes and a side vegetable dish follows three simple steps. There’s no particular order to follow but I usually prefer starting with the chicken, then mashed potatoes then finally the vegetables since they only require less than 5 minutes.
Ingredients
Here are the ingredients for the creamy chicken
- Chicken wings
- Chicken breast bones
- Red onion, sliced
- Red bell pepper, sliced
- Green bell pepper, sliced
- Yellow bell pepper, sliced
- Coconut cream
- Chopped coriander leaves
- Olive oil
- Salt
- Cumin
- Black pepper
- Paprika
- Dhana jeera
- Onion powder
- Tomato paste
Here’s what you need for the Mashed Potatoes
- Peeled potatoes
- Butter
- Milk
- Salt
- Chopped Coriander
For the side vegetables, grab the following ingredients
- Broccoli, chopped into florets
- Carrots, chopped
- French beans, trimmed
- Olive oil
- Salt
Cooking Instructions for Creamy Chicken with Mashed Potatoes
Here are the steps to follow to prepare this meal
Step 1: Prepping the Chicken
The first step of this creamy chicken with mashed potatoes recipe is prepping the chicken. Here’s how you do it.

- First, season your chicken with your choice of spices. In my case, I used cumin, paprika, black pepper, dhana jeera, onion powder, turmeric and salt. Combine all these spices into one bowl and mix them well.
- Rub the spice mix into your chicken very thoroughly until all the spices are absorbed with the chicken pieces.
- Cover the chicken with aluminum foil and set it into the oven at 200°C (392°F) for between 20-30 minutes. This process helps cook the chicken through to the bone using its own juices to eliminate uncooked red patches.
- After 30 minutes, pour some olive oil into a non-stick pan to start searing your fully cooked chicken pieces. Ensure both sides are golden brown and crispy.
- Once that’s done, add chopped onions and all the different bell peppers into the same oil that you used to sear the chicken with. Slowly cook them till the onions start turning slightly golden brown.
- Add some tomato paste then follow it up with spices. Once you have mixed them properly, add 2 cups of water to create thick soup. Let it simmer for about 2 minutes on low heat.
- Add your chicken pieces into the thick soup and mix it properly to ensure all the chicken pieces are covered. Let it simmer for another 5 minutes on low heat.
- It’s now time to add coconut cream and slowly mix it for about a minute until you get a near uniform texture. Let it simmer for 3 minutes on low heat.
- Add chopped coriander leaves into the mix and turn it for a minute. Switch off the cooker. Your chicken is now ready.
Step 2: Making the Mashed Potatoes

The second part is a lot easier. Here’s how you make the mashed potatoes.
- Boil the potatoes by covering them with enough water. Add a pinch of salt, and bring to a boil. Cook until the potatoes are fork-tender.
- Remove the potatoes from the cooker and drain any water that may be left. Add a small block of butter to the still hot potatoes and start mashing everything slowly.
- After it starts attaining some consistency, pour in a cup of warm milk and resume mashing. Keep adding milk until you attain the smooth and creamy consistency.
- Throw in some chopped coriander for the texture and mash a little more. Using a hand mixer can work but I prefer going manual as I like the rough texture more than the extremely smooth one.
- Your mashed potatoes are now ready.
Step 3: Prepping the Side Vegetables

Vegetables are like the glue that brings the mashed potatoes and the chicken together. This should be the last step as you only need to sauté on low heat to maintain that crunchiness.
- Add some little olive oil into your pan. Spread it evenly so it can glaze the entire pan.
- Throw in your vegetables mix (broccoli, chopped carrots and french beans) into the pan. Add a pinch of salt and slowly turn for about a minute.
- Cover the pan and let the vegetables steam and sauté on low heat for about 3 minutes. Turn off the cooker. Your vegetables are now ready!
Serve While Hot!
